The Art of Making a Danish Pastry with Milton Abel

American pastry chef Milton Abel has worked at high-flying places such as Noma and The French Laundry, but in this video he visits a classic Copenhagen institution: Bosse’s bakery in Østerbro, which is one of the oldest in the city. Guided by owner Jimmy Bosse, Milton gets a lesson in the secrets of the trade, knocks the stuffing out of a 4lb block of butter, and makes a delicious pastry known as the ‘baker’s infected eye’.
