When we traveled to Naples, Italy last year (the birthplace of Neapolitan pizza) we made a special trip to Pastificio Gentile in Gragnano for the end of their tomato canning season. If we learned one thing in Naples, it’s that it wouldn’t be a true Neapolitan pizza without San Marzano tomatoes. Frank Pinello watches the tomato canning masters at work and tries his best to keep up with them.
